Florentin started many years before the doors of the restaurant actually opened. Etienne, Jordan and Amber, the restaurant’s founders, had been bouncing around ideas of how to put their experiences and ideas together to create something special. After subsequent trips to the Levant and Mediterranean region, the creative journey began.

A style and cuisine steeped in history has been brought to life in the form of Florentin, the ultimate premium-casual dining experience.

Jordan Biderman-Pam is the visionary force behind Florentin, developing this unique Middle Eastern-Mediterranean concept based on his travels to the Levantine region. With a wealth of experience across esteemed establishments in Cape Town, Jordan has honed his expertise in restaurant operations, team leadership, and customer relations. The story of Florentin is the result of Jordan’s dreams and dedication, creating a space that brings people together through exceptional food and memorable experiences.



Etienne van Wyk is the executive chef and culinary mastermind at Florentin, where his passion for food and meticulous attention to detail shines through each dish. His commitment to perfection is evident in the painstaking care he dedicates to selecting each ingredient. He believes that great cooking is not just about flavors but also about precision; every gram counts, and every element must harmonize flawlessly. This unwavering dedication has garnered him a loyal following of food enthusiasts and critics alike.


Amber Poole, a dynamic and ambitious 21-year-old, has carved a name for herself in the thriving hospitality and nightlife industries. Amber very quickly advanced her career in the restaurant industry, landing a management position at a renowned 800-seater restaurant in Cape Town. Her natural leadership skills, attention to detail, and an innate understanding of customer service allowed her to thrive in this high-pressure role, where she honed her skills in  navigating the complexities of a busy kitchen and dining area.

Their combined passion and expertise have transformed Florentin into a coveted destination for both locals and visitors, known for its innovative menu, warm atmosphere, and exceptional service.
